Canary offers 3 primary methods for exporting data out of the historian to 3rd parties:

1. API 
2. ODBC
3. Publisher

The Publisher only offers realtime data as it is stored in the historian, whereas the API and ODBC Connector allow the export of historical data. The API would be more efficient than ODBC.

As for the Canary Admin,  like other Canary services, it can only be installed on Windows servers currently. Eventually Canary will be able to run in Linux environments, but that is still in development and won't be ready for some time.
